AHI POKE 6-Chip NACHOS

MAIN INGREDIENTS

wonton chips

ahi tuna

avocado

pineapple

serrano peppers

scallions

micro cilantro

poke sauce ( poke sauce + miso glaze + sesame oil )

spicy mayo


wonton chips

- fry fresh daily ( dont over fry, remove from oil after 5-8 seconds )

use ladel and pre-fry wonton chips flat

- dust with gochujang powder


ahi tuna

- chopped into 1/4" - 1/2" cubes


avocado

- sliced / chopped fresh daily 1/4" cubes


pineapple

- chopped into 1/4" cubes


serrano peppers

scallions

cilantro

kizami nori


SAUCE

- poke sauce ( poke sauce + miso glaze + sesame oil )

- spicy mayo


SPRINKLES

- sesame seeds

- scallions

- kizami nori

not too much nori, just enough to stand out on the chips


PLATING

- use whole chips only, discard the chips that are overly curved, broken.

- cover plate with chips in even layer. 6x chips.

- spicy mayo on chips first

- tuna, make sure each chip has 3-4 pieces of tuna on

- avocado chunks 1-2 pieces per chip

- pineapple 1-2 pieces per chip

- serrano peppers

- sprinkle

with sesame seeds, scallions, kizami nori
