Chopped hamachi sashimi ( from sashimi station at end of shift )


2kg hamachi

1/8 cup kewpie

1/4 cup scallions (appx)

1/8 cup ponzu (GF ponzu)


mix together in large stainless bowl,


NOTES: the spicy hamachi recipe is difficult to provide exact measurements for. When making spicy yellowtail "on the fly" its very acceptable to wing it. try to use same proportions, and do not use any different ingredients.
